Since its grand opening in 1894, the Gundel has been regarded not as a mere restaurant, but \u2013 thanks to founder K\u00e1roly Gundel, J\u00e1nos Gundel, and the renowned chefs that followed them \u2013 as the cradle of modern Hungarian dining culture, an establishment synonymous with the history of Hungarian gastronomy and restauranteering in general.\u00a0 The secret of the <a href=\"https:\/\/gundel.hu\/en\/about\/\">Gundel Restaurants<\/a>\u00a0popularity lies with its sincere hospitality and venerable atmosphere, the centuries-old tradition that permeates its stately building, and a kitchen that, while using the very best of ingredients, remains steadfast in its dedication to innovation.<\/p>\n<p>Starting April of 2018, the Gundel team will be welcoming to its ranks <strong>Zsolt Litauszki<\/strong>, member of the Bocuse\u00a0d\u2019Or\u00a0Academy of Hungary and former creative chef of the Zsidai\u00a0Group.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.danubiushotels.com\/budapest-guide\/wp-content\/uploads\/2018\/04\/Litauszki-Zsolt_sz\u00ednes-683x1024.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone wp-image-5980 size-large\" src=\"https:\/\/www.danubiushotels.com\/budapest-guide\/wp-content\/uploads\/2018\/04\/Litauszki-Zsolt_sz\u00ednes-683x1024-683x1024.jpg\" alt=\"Zsolt Litauszki - Chef Gundel Restaurant Budapest\" width=\"683\" height=\"1024\" srcset=\"https:\/\/www.danubiushotels.com\/budapest-guide\/wp-content\/uploads\/2018\/04\/Litauszki-Zsolt_sz\u00ednes-683x1024.jpg 683w, https:\/\/www.danubiushotels.com\/budapest-guide\/wp-content\/uploads\/2018\/04\/Litauszki-Zsolt_sz\u00ednes-683x1024-200x300.jpg 200w, https:\/\/www.danubiushotels.com\/budapest-guide\/wp-content\/uploads\/2018\/04\/Litauszki-Zsolt_sz\u00ednes-683x1024-600x900.jpg 600w\" sizes=\"(max-width: 683px) 100vw, 683px\" \/><\/a><\/p>\n<p>Fresh from a two-year stint in Costa Rica, Litauszki will be charged with developing a new approach for the restaurant, one that nevertheless respects the establishment\u2019s time-tested, traditional values.\u00a0 At the start of his career, chef Litauszki spent nine years in Austria, where he worked in eight different culinary establishments, including two that boasted Michelin stars.\u00a0 Upon his return to Hungary in 2008, Litauszki quickly brought the Malig\u00e1n Wine Tavern, then under his management, to rank among the best restaurants in the country.\u00a0 Between 2009 and 2016, after opening the Zsidai Group\u2019s second restaurant, the successful chef participated in the founding and operation of twelve other hospitality industry establishments (including the Pierrot, the \u00c9S Bistro at Kempinski Hotel, Baltaz\u00e1r Hotel and Restaurant, Pest Buda Hotel and Bistro, the Opera Caf\u00e9, the Sp\u00edler, and Jamie\u2019s Italian Budapest), developing a special menu for each one.<\/p>\n<div class=\"video-container\"><iframe title=\"Gundel Restaurant Short Image Film\" width=\"500\" height=\"281\" src=\"https:\/\/www.youtube.com\/embed\/9nzxt1TTYig?feature=oembed&#038;wmode=opaque\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/div>\n<p>As for the restaurant itself, as early as the time of the New York World\u2019s Fair, the Gundel represented Hungarian gastronomy so extraordinarily that the New York Times claimed it had done more for Hungary\u2019s reputation than might have been accomplished with an entire shipload of tourist brochures.\u00a0 Just as Kod\u00e1ly and Bart\u00f3k had done with the nation\u2019s folk music, Gundel sought to collect recipes for gastronomic specialties from all parts of historic Hungary, often catering to his regular guests with dishes prepared specially for, and named after them.\u00a0 Since then, the Gundel\u2019s reputation has remained undiminished, winning a top ranking among voters for Budapest\u2019s best restaurant again in 2017.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.danubiushotels.com\/budapest-guide\/wp-content\/uploads\/2018\/04\/30629703_1658201210882481_7879044335449145344_o-768x512.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-5981 size-full\" src=\"https:\/\/www.danubiushotels.com\/budapest-guide\/wp-content\/uploads\/2018\/04\/30629703_1658201210882481_7879044335449145344_o-768x512.jpg\" alt=\"Peter Knoll\" width=\"768\" height=\"512\" srcset=\"https:\/\/www.danubiushotels.com\/budapest-guide\/wp-content\/uploads\/2018\/04\/30629703_1658201210882481_7879044335449145344_o-768x512.jpg 768w, https:\/\/www.danubiushotels.com\/budapest-guide\/wp-content\/uploads\/2018\/04\/30629703_1658201210882481_7879044335449145344_o-768x512-300x200.jpg 300w, https:\/\/www.danubiushotels.com\/budapest-guide\/wp-content\/uploads\/2018\/04\/30629703_1658201210882481_7879044335449145344_o-768x512-600x400.jpg 600w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/a><\/p>\n<p>With the arrival of Zsolt Litauszki starting 16 April, the legendary Gundel will be offering diners an <a href=\"https:\/\/gundel.hu\/en\/menu\/\">all-new menu<\/a>, for which the kitchen staff has united selected classics from the Gundel legacy with various elements of contemporary cuisine to create an experience that represents the best of both the past, and present.\u00a0 Perusing the new menu, one discovers \u2013 among other things \u2013 K\u00e1roly Gundel\u2019s famous <em>guly\u00e1s<\/em>, J\u00e1nos Gundel\u2019s fish soup, and goose liver delicacies prepared in that particular Gundel style.\u00a0 Among dishes and accompaniments invented in the time of K\u00e1roly Gundel himself are mushroom salad, Cs\u00edki sauce, Gundel-style tenderloin strips, and Pittsburgh veal ribs.\u00a0 Still, the most illustrious of the restaurant\u2019s creations remains to this day its special dessert, <em>Cr\u00eapes Gundel<\/em>, whose history is the stuff of legends, but whose invention is attributed not to the famous restauranteur whose name they bear, but to Lola Matzner, wife of writer S\u00e1ndor M\u00e1rai.\u00a0 Though for many years the menu actually referred to the dish as <em>Cr\u00eapes M\u00e1rai<\/em>, with the rise of communism and the subsequent banning of M\u00e1rai\u2019s works, the dish was necessarily rechristened.\u00a0 Filled with rum-infused walnut paste and doused with dark chocolate sauce, <em>Cr\u00eapes Gundel<\/em> are wheeled out tableside, spectacularly flamb\u00e9ed, and served piping hot.<\/p>\n<div class=\"video-container\"><iframe title=\"Gundel-palacsinta receptvide\u00f3\" width=\"500\" height=\"281\" src=\"https:\/\/www.youtube.com\/embed\/4Z4HuQwQmNQ?feature=oembed&#038;wmode=opaque\" frameborder=\"0\" allow=\"accelerometer;
